Healthy Soup Recipe- Spicy Turkey Sausage Soup

Ingredients

Hot italian turkey sausage 1 Pound , casing removed
Onions 2 Small , diced
Carrots 3 , diced
Red bell pepper 1 , diced
Salt To Taste
Pepper To Taste
Garlic 3 Clove (15 gm) , minced
Canned cannellini beans 15 Ounce , drained and rinsed
Canned diced tomatoes 28 Ounce
Chicken stock 48 Ounce
Brown rice 1 Cup (16 tbs)
Baby spinach 4 Cup (64 tbs)

Directions

MAKING:

In a large pan, saute turkey sausage over medium heat.

Cook well and once done set aside.

Add onions, carrots, bell pepper to same pan and season with salt and pepper. Cook for 4-5 minutes.

Add garlic and cook for 1 minute.

Add cannellini beans, tomatoes, chicken stock and stir well to combine.

Add brown rice and stir again. Cook for 20-30 minutes.

Once rice is well cooked, add baby spinach and cook until it is wilted.

Adjust seasonings to taste.
