Butternut Squash Soup

Easy butternut squash soup recipe will satisfy your every soupy desire. Fresh butternut squash with spices and topped with an exciting relish! Super easy butternut recipe.


For soup:
Butternut squash 1 1/2 Pound , peeled, seeds removed, cut into 1 inch chunks
Butter 2 Tablespoon
Diced onion 1 Cup (16 tbs)
Salt 1/4 Teaspoon
Curry powder 1/2 Teaspoon
Minced garlic 2 Teaspoon
Apple 1 , peeled and cubed
Chicken stock/Vegetable stock 4 Cup (64 tbs)
Lemon juice 1 Tablespoon
For coconut relish:
Shredded sweetened coconut 1/4 Cup (4 tbs)
Minced parsley 1/4 Cup (4 tbs)
Minced jalapeno 2 Tablespoon
Lemon juice 2 Tablespoon



Heat a large pot with butter and sauté onion for 5 minutes until browned.

Add garlic, salt, curry powder, squash, ½ cup of water and mix well. Cover with lid and cook for 15 minutes until tender.

Add apple and cook covered for 5 minutes.

Add 2 cups of stock and puree the mixture in a blender. Add remaining stock and heat the soup.

In a small bowl, combine coconut, parsley, jalapeno, lemon juice and mix well.

Garnish with spoonful of relish before serving.
