Chicken Quinoa Dumpling Soup (can be gluten free)

Ingredients

Chicken 1 Small
Onion 1 Medium
Carrot 1 Large
Shredded white cabbage 2 Cup (32 tbs)
Himalayan pink salt 1 Teaspoon
Freshly ground black pepper 1/2 Teaspoon
Water 3 Liter
For the dumplings
Quinoa flour 1/2 Cup (8 tbs)
All purpose flour 1/2 Cup (8 tbs)
Himalayan pink salt 1/2 Teaspoon
Schmaltz/Lard 1/3 Cup (5.33 tbs) , melted
Eggs 2 Large
Baking powder 1 Teaspoon

Directions

MAKING

1. In a large pot, place the chicken. Add in the onion, carrot, white cabbage, salt and pepper. Por in the water and allow to simmer for 3-4 hours.

2. Fir the dumplings, in a bowl, combine quinoa flour, all purpose flour, baking powder, salt and pepper. Pour in the schmaltz and eggs and knead until the dough is no longer sticky. Form dumplings usng the dough as shown in the video and set aside.

3. After the soup has simmered for 3-4 hours, strain it and return it back to the pot. Add the prepared dumplings to the soup and allow to simmer for 1 hour.

SERVING

4. Ladle into the soup bowls and serve with a dash of hot sauce.
