Garlic Vegetable Soup (Healthy Heart)

A sumptuous soup of mixed vegetables flavored predominantly with garlic, this nourishing recipe is innovatively thickened with rolled oats. This not only makes the Garlic Vegetable Soup creamy, but also adds more fibre to this soup. Together, the ingredients make it a very heart-friendly concoction.


Finely chopped garlic 2 Teaspoon
Chopped mixed vegetables 1 Cup (16 tbs) , boiled (French beans, carrots, green peas and cauliflower)
Oil 1 Teaspoon
Finely chopped onion 1/4 Cup (4 tbs)
Salt and ground black pepper To Taste
Quick cooking rolled oats 2 Tablespoon
Chopped coriander 2 Tablespoon
Water 3 Cup (48 tbs)



1. In a deep non-stick pan, heat oil, add garlic, onion and sauté over medium flame for 1-2 minutes.

2. Add mixed vegetables, 3 cups of water, salt and pepper. Stir occasionally and cook for 2 minutes.

3. Add the oats and coriander. Mix well and cook for another 1 minute.



4. Garnish with coriander and serve hot.
