Quick and Simple Fish Mornay

Sole fillet 8 , skinned
Water 1/4 Pint
Butter 1/2 Ounce
Flour 1/2 Ounce
For garnish
Button mushrooms 4 , cooked in a little milk
Milk 1/2 Pint , to cook mushrooms
Salt To Taste
Pepper To Taste
Grated cheddar cheese 2 Ounce



1) Preheat the oven to 375°F.

2) Preheat the grill.


3) In a buttered ovenproof dish, fold and place the sole fillets.

4) Add a little water, cover and poach in centre of the preheated oven for 15 minutes.

5) In a saucepan, melt the butter, stir in the flour and cook over a low heat for 1 minute.

6) Remove from heat and gradually stir in the milk.

7) Return to heat, bring to a boil, stir constantly and cook until the sauce is thick and creamy.

8) Season with sat and pepper to taste, then stir in 1 oz grated cheese.

9) Arrange the fish in serving dish and spoon over the cheese sauce.

10) Sprinkle with rest of the cheese and place under a hot grill, until browned.


11) Garnish the Fish Mornay with mushrooms, if desired and serve hot.
