Calamari | 1 Pound | |
Olive oil | 2 Tablespoon | |
Garlic | 1 , minced | |
Sherry wine | 1/4 Cup (4 tbs) | |
Kosher salt | 1/2 Teaspoon | |
Fresh lemon juice | 1 Tablespoon |
GETTING READY
Rinse, drain and pat calamari dry.
Cut calamari into rings and pat dry again with a paper towel to remove as much excess liquid as possible.
MAKING
Heat a large skillet over high heat, pour olive oil and immediately add the calamari rings sautéing for 2 minutes.
Remove calamari to a bowl and set aside.
Add the minced garlic, sherry wine, salt and lemon juice to the same skillet over high heat and allow to boil for 1 minute.
Add the calamari back into the sherry lemon sauce to heat through for 20 seconds.
SERVING
Serve with steamed rice.
