Ginger slice 2
Sherry 2 Tablespoon
Soy sauce 4 Tablespoon
Vinegar 8 Tablespoon
Water 4 Cup (64 tbs)
Sugar 8 Tablespoon

Wash the pigs feet and chop into quarters.

Dry them carefully.

Heat a pan with the oil and when it is very hot add the pigs feet and brown them well.

Add the ginger, sherry and the soy sauce and stir once or twice.

Add the vinegar and water and when it begins to boil, cover the pan, turn the heat low and simmer for 30 minutes, being careful that the liquid does not dry up.

If it shows signs of doing so, add a mixture of water and soy sauce.

Turn the pigs feet, add sugar and simmer for another 30 minutes or until the meat and bones start to separate.

Serve in a shallow bowl.
