Poached Pears with Raspberry Sauce

Pears 4 Small
Lemon juice 1 Teaspoon
Water 4 Cup (64 tbs)
Sugar 2 Cup (32 tbs)
Grated lemon rind 1 Teaspoon
Lemon juice 1/2 Tablespoon (Extracted From 1/2 Fruit)
Cinnamon stick 3 Inch (1 Piece)
Whole cloves 3
Vanilla ice cream 1 Cup (16 tbs)
Mint leaves 8 (To Garnish)
Raspberry sauce 1/4 Cup (4 tbs)
Butter 1/4 Cup (4 tbs)
Raspberry preserves 1/4 Cup (4 tbs)
Ground cinnamon 1 Pinch
Poaching syrup 1 Cup (16 tbs) (Reserved)



1) Using a peeler, peel the pears, removing the core and ensuring that the stems are intact

2) Using a pastry brush, brush the pears with lemon juice to prevent them from discoloring

3) Mix together the water, sugar, lemon rind, cinnamon and cloves and place them into a Dutch oven till the sugar dissolves

4) Place the pears into the oven placing them upright

5)Simmer the pears for 25 minutes, on low heat covered

6) Allow the pears to cool and stand in the poaching syrup

7) Once in a while spoon the syrup over the pears

8) Into a serving dish, spoon out the pears

9) Strain the syrup reserving 1 cup for the raspberry sauce

10) Into a saucepan, melt the butter

11) Then add in the preserve, cinnamon and the reserved poaching syrup and simmer over a low heat for 20 minutes


12) Serve the pears on scoped in cream with the raspberry sauce spoon over and garnished with a mint leaf
