Shrimp With Hot Sauce

Ingredients

Fresh shrimp/Prawns 1 Pound
Egg white 1
Sherry 1 Teaspoon
Salt 1 Teaspoon
Cornstarch 1 1/2 Teaspoon
Vegetable oil 3/4 Cup (12 tbs)
Garlic 1 Tablespoon , chopped
Green onions with tops 2 Tablespoon , chopped
Tomato catsup 2 Tablespoon
Chilli paste/Chili oil 1 Teaspoon
Sugar 1/2 Teaspoon
Salt 1/2 Teaspoon
Soup stock/Water 3 Tablespoon
Cornstarch 2 Teaspoon
Sesame oil 1 Teaspoon

Directions

GETTING READY

1. Peel and devein shrimp and pat dry

MAKING

2. Mix egg white, sherry, salt and cornstarch and also add shrimp and marinate 30 minutes

3. Add oil to wok and heat, when hot, add shrimp and stir-fry until 90% cooked

4. Drain shrimp and set aside, reserving 2 tbs oil, now return oil to wok

5. Heat again, adding garlic and onions, toss to cook

6. Meanwhile mix catsup, chili paste, sugar, salt, stock, cornstarch and sesame oil

7. Add to wok with shrimp, and cook just long enough to heat shrimp through

SERVING

8. Serve immediately

9. Serve with salads
