Bell pepper | 1 , chopped finely | |
Celery stalk | 2 , chopped finely | |
Garlic | 2 Tablespoon , chopped finely | |
Oil | 1 Cup (16 tbs) (For deep frying) | |
Flour | 1/2 Cup (8 tbs) | |
Cajun seasoning | To Taste | |
Pork steaks | 4 | |
Salt | To Taste | |
Pepper | To Taste | |
Beef broth | 1 Carton (1 l) | |
For french fries | ||
Potato | 4 , peeled | |
Sugar | 1/2 Cup (8 tbs) | |
Hot water | 2 Cup (32 tbs) |
GETTING READY
1. In a bowl, combine the flour with seasoning and set aside.
MAKING
2. In a pan, heat oil. Dredge the pork steaks in seasoned flour and deep fry one at a time. Remove and set aside
3. In the remaining oil, add the onions, bell pepper, garlic and celery. Season with salt and pepper as per your taste. Saute for a while.
4. In baking pan, place the fried pork steaks, put the sauteed vegetables on top and pour in the beef broth.
5. Place in the oven and cook uncovered at 375 degrees for 3 hours.
6. Meanwhile, cut the potatoes to make french fries and place them immersed in water for 4 -5 minutes. Drain in a colander and set aside.
7. In a pyrex dish, dissolve sugar in hot water and place the cut potatoes in it.
8. Prepare the deep fat fryer and put the fries in it in two batches. Allow to fry for two minutes and remove on paper towels. Place these fries in freezer for twenty minutes.
9. Remove from the freezer and put them back in the deep fat fryer until crisp and golden.
FINALIZING
10. Shred the pork steaks. Slice a bread of your choice and spoon in this moist and decadent cajun pork.
SERVING
11. Serve accompanied with hot french fries. You can also add some horseradish mayo to your sandwich.
