Betty's Batter-Dipped Fish Poor Boy Sandwiches

In this video, Betty demonstrates how to make Batter-Dipped Fish Poorboy Sandwiches (using Tarragon-Chive Sandwich Spread.) This is a delicious and fun sandwich to make!

Ingredients

For the fish
Cod fillet 1 Pound , cut into 4 large pieces
Salt and pepper To Taste
Peanut oil 2 Cup (32 tbs) (For deep frying)
For the deep fry batter
Active dry yeast 1 Teaspoon
Lukewarm water 1/4 Cup (4 tbs) (105
Water 3/4 Cup (12 tbs)
Eggs 1 Medium , well beaten
All purpose flour 1 Cup (16 tbs)
Salt 1/2 Teaspoon
For tarragon chive sandwich spread
Mayonnaise 1 Cup (16 tbs)
Lemon juice 3 Tablespoon
Dijon mustard 1 Tablespoon
Sweet pickle relish 1 Tablespoon
Hot sauce 1/2 Teaspoon
Fresh chives 1 Teaspoon , chopped finely (or dried chives
Fresh tarragon 1 Teaspoon , chopped finely (or dried tarragon
For sandwich
Submarine roll 4 Small , sliced into half (mini
Lettuce leaves 4 Medium

Directions

GETTING READY

1. Season the cod fillets with salt and pepper on both the sides. Place it in a bowl till used.

For The Deep Fry Batter

2. In a small bowl add yeast and warm water. Mix it well. Set aside for 10 minutes.

3. In another bowl add all purpose flour and salt. Whisk to mix. Put in the well beaten egg. Mix well till incorporated. Add the yeast mixture and water slowly and mix into a smooth batter. Let it sit at room temperature for around 1 hour to rise.

For The Sandwich Spread

4. In a bowl, mix all the ingredients till combined. Set aside.

MAKING

For The Deep Fried Fish

5. In a deep frying pan heat peanut oil to high.

6. Dip each fish piece into the batter. Let the excess drain off. Put it carefully into the hot oil and fry till it turns golden brown on both the sides. Transfer it into a paper towel to drain off excess oil.

For The Sandwich

7. On the bottom/ flat slice of the bun spread the tarragon spread. Place a deep fried fish on it. Top it with lettuce leaf and cover with the other slice of the bun to form a sandwich. Repeat this with all other fish pieces.

SERVING

8. In a serving plate, serve the sandwich with fries and sauce.
