Lemony 2 Bean Grilled Cheese Sandwich

Whats easier than putting together a quick sandwich for breakfast or dinner! Well, this easy to make sandwich spread is sure going to make your job a lot simpler and the sandwich a lot tastier. I have used two varieties of beans and to make it vegan, you can skip the cheese spread or substitute it with vegan alternatives. Use this as sandwich spread or dip or may be, even make patties out of it!


For the bean spread
Kidney bean 50 Gram , soaked and drained
Black bean 25 Gram , soaked and drained
Salt To Taste
Crushed garlic 5 Gram (about 5 cloves)
Lime juice 3/4 Tablespoon
Green chili 1 Small , chopped finely
Onion 1 Small , chopped finely
Tomato salsa 1 Tablespoon
Cheese spread 1 Tablespoon (any flavor)
Cumin seed 1 Pinch
Freshly ground pepper 1/2 Teaspoon
For serving
Wholewheat bread slice 8
Cheese slices 4



1. Pressure cook bens with garlic and salt to taste, until mushy for about 15-20 minutes. You should be able to mash the lentils well while leaving some as whole.


If the cooked and mashed bean mix is too dry, add some water to it to make it slightly thin.

2. Now, add in the remaining ingredients one by one, stirring well after every addition to combine well. Leave aside for some time.

This will make enough spread for about 4 sets of sandwich

3. Slightly grill 8 slices of bread (for about 2 minutes).

4. Working with one sandwich at a time, onto one grilled slice of bread, spread about 1 ½-2 tablespoons of bean spread.

5. Top it with a cheese slice and cover with another slice of bread. Repeat the same for the rest 3 sandwiches.

6. Now, put it back in the oven, grill for about 2-3 minutes on high heat or until bread is browned and cheese melts.

7. Cut the sandwich into half and serve as it is or pair it with simple tomato soup!
