Veggie Toasted Sandwich

This is an interesting toasted sandwich, which is easy to make and can be served when you have unexpected guests at home. You can use whole grain bread slices instead of white and can make this dish healthier.

Ingredients

Boiled potato 1/4 Cup (4 tbs) , cubed
Boiled peas 1/4 Cup (4 tbs)
Onion 3 Tablespoon , finely chopped
Tomatoes 3 Tablespoon , finely chopped
Ginger 1/4 Teaspoon , finely chopped
Green chilies 1/2 Teaspoon , finely chopped
Salt and pepper To Taste
Low fat veg mayonnaise 2 Tablespoon
Bread slices 8

Directions

MAKING

1. In a large bowl, mix together all the ingredients well except the bread slices.

2. Place the bread in a toaster and toast, until done.

3. Place the mixture over one bread slice and cover with another slice. Cut the bread slices with a knife.

SERVING

3. Garnish Veggie Toasted Sandwich with some cheese (optional) and serve with tomato ketchup.
