Nothing can match up to the goodness of a nutritious protein packed sandwich when you get back from a long day at work. Make this inviting Salmon baguette sandwich at home and enjoy the tasty tang the lemon mayonnaise gives it.

Whole wheat baguette slices | 1 Pound | |
Grated lemon zest | 1 Tablespoon | |
Reduced sodium soy sauce | 1 Tablespoon | |
Lemon pepper seasoning | 1/2 Teaspoon (Leveled) | |
Boneless salmon steak | 1 Pound (1 inch thick) | |
Tomato | 1 , sliced | |
Shredded romaine lettuce | 1 1/2 Cup (24 tbs) |
GETTING READY
1. Pre-heat the griller and get it ready.
2. In a small bowl, blend the mayonnaise with a hint of the lemon pepper seasoning and a small amount of lemon zest to prepare the lemon mayonnaise.
2. Cut bread horizontally in half. Drizzle 1/2 tablespoon of the oil over cut sides of bread.
3. In a small bowl, mix remaining 1/2 tablespoon oil, the lemon peel, soy sauce and lemon pepper seasoning. Rub both sides of salmon steak with this oil mixture.
4. Cover and grill salmon over medium heat 8 to 9 minutes, turning over once or twice, until done. Place the bread too, for last 2 minutes of grilling or until toasted.
5. Spread lemon mayonnaise on bottom half of bread. Cut salmon crosswise into thin slices. Layer lettuce, tomato slices and fish on bottom half of bread. Place the other half of bread on top; cut crosswise into 4 sandwiches.
SERVING
5. Serve with your favorite dipping sauce and sip on fresh lime soda.
