Ciabatta Bread Rolls Sandwich

A simple back to school recipe.

Ingredients

Ciabatta bread 2
Potato pancake 1 Medium ((recipe available at
Corn and mango salsa 1 Cup (16 tbs) ((recipe available at
Lettuce leaves 2 Medium
Olive oil 1 Tablespoon
Tomato slice 1 Medium
Mustard sauce 1 Teaspoon

Directions

GETTING READY

1.Preheat a toaster oven at 350 degrees F.

MAKING

2.Over 1 bread sprinkle cheese and bake in the toaster oven till the cheese is melted.

3.Remove the toasted bread and place a lettuce leaf, tomato slice potato pancake and corn salsa mixed with olive oil.

4.Spread some mustard sauce and top with the other ciabatta bread.

SERVING

5.Pack as a lunch snack or as desired.
