Ingredients

Water 3 Cup (48 tbs)
Medium shrimp 3/4 Pound , unpeeled
Canned pineapple tidbits 8 3/4 Ounce , drained (1 can)
Celery 1/2 Cup (8 tbs) , chopped
Green onions 2 Tablespoon , finely chopped
Mayonnaise 2 Tablespoon
Whole wheat bread slice 8 , toasted & buttered
White bread slice 4 , toasted & buttered
Bacon slices 8 , cooked & drained
Tomato slices 8

Directions

MAKING

1) Take a saucepan and boil water in it. Add shrimp and return mixture to a boil.

2) Reduce heat and simmer for about 3-5 minutes. Drain nicely and rinse with cold water. Chill.

3) Peel, devein and coarsely chop shrimp.

4) Take a mixing bowl and combine shrimp with the next 4 ingredients in it. Toss gently.

5) Spread the shrimp mixture on 4 whole wheat slices. Top with white toast.

6) Place 2 bacon slices and 2 tomato slices on each.

7) Top with the remaining toast.

8) Secure the sandwiches with wooden picks.

SERVING

9) Cut into triangles and serve immediately.
