BBQ Chicken Sandwich

Homemade BBQ Chicken Sandwich recipe! Shredded chicken in an easy homemade barbecue sauce.

Ingredients

Minced onion 1 Cup (16 tbs)
Oil 1 Teaspoon
Tomato sauce 1 Cup (16 tbs)
Brown sugar 2 Tablespoon
Apple cider vinegar 1/4 Cup (4 tbs)
Black pepper 1/2 Teaspoon
Ground ginger 1/4 Teaspoon
Allspice 1/4 Teaspoon
Red pepper flakes 1/4 Teaspoon
Salt 1/2 Teaspoon
Peanut butter 1 Tablespoon
Shredded chicken 4 Cup (64 tbs) (from one 3 pound chicken or 2 large boneless breasts)
Topping To Taste (Pickled jalapeos, onions, avocado, and/or blue cheese)
For coleslaw::
Thinly shredded cabbage 2 Cup (32 tbs)
Vinegar 1 Tablespoon
Mayonnaise 2 Tablespoon
Salt 1/4 Cup (4 tbs)
French bread rolls/One long baguette cut into 4 pieces 4 Large

Directions

MAKING:

Heat oil in a large skillet and sauté onions for a minute. Sprinkle salt and cover with a lid.

Reduce heat and cook for 20-25 minutes until golden brown with occasional stirring.

Add sauce, sugar, vinegar, remaining salt, black pepper, ground ginger, allspice, red pepper flakes and mix well.

Allow to simmer and add peanut butter to it. Add chicken and cook for 2-5 minutes.

For coleslaw, combine cabbage, vinegar, mayonnaise, salt in a large bowl and mix well.  Set aside once done.

Cut open bread rolls as shown in the video and toast lightly.

Assemble sandwich with prepared chicken, coleslaw, pickled jalapenos, onions, avocado, blue cheese as desired.

 

SERVING:
