Cream cheese | 2 Ounce | |
Mayonnaise | 2 Tablespoon | |
Pickled jalapeno slices | 1 Tablespoon , coarsely chopped, with juices | |
Dijon mustard | 1/2 Tablespoon | |
Chopped pimentos | 2 Ounce , drained (1 Jar) | |
Shredded cheddar cheese | 4 Ounce | |
Shredded pepper jack cheese | 4 Ounce | |

Making
In a food processor, place cream cheese, mayonnaise, chopped jalapeño pepper slices, and mustard. Process until smooth.
Add chopped pimentos and pulse a few times until flecks of pimento still remain in mixture.
Place mixture into a medium mixing bowl.
Stir in Cheddar cheese and pepper jack cheese.
Spread on cocktail pumpernickel bread.
Serving
Place sandwiches on a nice serving plate and enjoy.
