Chipotle Chicken BLT Sandwich- Planning My Meals

Here is a recipe that I use to help me plan out some of my meals for the week. The Chipotle Chicken in this recipe is versatile and you can use it a lot of different ways. From salads to sandwiches or even homemade pizzas. Give them a try!

Ingredients

For chipotle marinade
Chipotle peppers in adobo sauce 3 (with 2 tablespoons of sauce)
Ground coriander 1 1/2 Teaspoon
Ground cumin 3/4 Teaspoon
Garlic cloves 3 , chopped finely
Finely chopped onion 3 Tablespoon
Extra virgin olive oil 1/2 Cup (8 tbs)
Boneless chicken breast 6 , butterflied
Kosher salt To Taste
Black pepper To Taste
Grand diamond all purpose seasoning To Taste
For blt sandwiches:
Ciabatta roll 4
Maple bacon slice/Turkey bacon 8
Tomato slices 8
Green leaf lettuce 4
For sandwich spread:
Mayonnaise 1/3 Cup (5.33 tbs)
Dijon mustard 1/4 Cup (4 tbs)

Directions

 

GETTING READY

1. In a blender, blend together chipotle peppers, adobo sauce, coriander, cumin, garlic, onions and olive oil until smooth.

2. Season the chicken  with kosher salt, black pepper and Grand Diamond All Purpose Seasoning.

3. Combine the marinade with the chicken in a large bowl, massage all of the chicken with the marinade, cover and refrigerate for at least 4 hours.

4. Preheat oven to 425F.

 

MAKING

5. On a baking tray fitted with rack, place the bacon slices, season with black pepper, cook for about 15 minutes.

6. On a preheated grilling pan, cook chicken from both sides.

 

ASSEMBLING

7.  Slice and lightly toast the rolls. Spread the prepared spread on both sides.Place the lettuce and tomato slices on the bottom bun.

8.  Top the tomatoes with the chicken and 2 slices of bacon, cap with the top bun.

 

SERVING

9. Serve immediately with your choice of beverage.
