How to make Pina Colada Chicken Salad Sandwiches: Easy Chicken or Tuna Salad Recipe with Pineapple Quickbread! A great recipe for summer!


For the bread
Eggs 4
Vegetable oil 1/4 Cup (4 tbs)
Granulated sugar 1/2 Cup (8 tbs)
Vanilla extract 1 Teaspoon
Coconut extract 1 Teaspoon
Pineapple juice 1/4 Cup (4 tbs)
Jalapeno pepper 2 Tablespoon , diced
All purpose flour 3 Cup (48 tbs)
Salt 1 Teaspoon
Baking soda 1 Teaspoon
Crushed pineapple 398 Milliliter , drained
Flaked sweetened coconut 1/2 Cup (8 tbs)
For the sandwich
Flaked chicken/Tuna 2 Can (20 oz)
Diced celery 1/2 Cup (8 tbs)
Diced green onion 1/2 Cup (8 tbs)
Crushed pineapple 1 Can (10 oz) , drained
Flaked sweetened coconut 1 1/2 Cup (24 tbs)
Coconut extract 1/2 Teaspoon
Mayonnaise 1 Cup (16 tbs)
Curry powder 1 Teaspoon



1. Preheat the oven to 350 degrees F.

2. Grease a loaf pan and dust with flour.


3. For the Pineapple Quick Bread:In a large bowl combine eggs, vegetable oil, granulated sugar, coconut extract, vanilla extract and pineapple juice. Whisk well and add the jalapeno pepper.

4. In another bowl, combine the dry ingredients which include flour, salt and baking soda. Mix the dry ingredients with the egg mixture along with the crushed pineapple and flaked sweetened coconut. Mix everything until it all comes together.

5. Pour the mixture in the prepared loaf pan and bake for 45 to 50 minutes. Allow the bread to rest in the pan for 10 minutes and then remove.

6. For the Sandwich:In a bowl, combine flaked chicken, celery, green onion, crushed pineapple, flaked sweetened coconut, coconut extract, mayonnaise and curry powder. Mix well.


7. Slice the pineapple quick bread, spread the chicken salad mixture on one slice and if you want you can arrange some baby spinach on it. Cover with another slice of bread and serve.
