It's all about the fish!
Today we are grilling up a delicious Salmon filet with lemon slices cooked on the Island Grillstone.
Fresh herb seasoning salt | ||
Parsley stalks | 2 , finely chopped | |
Sage leaves | 4 , finely chopped | |
Thyme stems | 2 , finely chopped | |
Rosemary branch | 2 , finely chopped | |
Marjoram stems | 1 , finely chopped | |
Fine sea salt | 1 Cup (16 tbs) | |
Lemon zest | 1 Tablespoon (Zest of 1 lemon) | |
Other ingredients | ||
Lemon | 1 , sliced and halved | |
Salmon fillets | 3 Pound , tail and belly fat trimmed (Fresh Atlantic One) | |
Olive oil | 6 Tablespoon (Divided) | |
Japanese eggplants | 2 , ends trimmed and eggplants quartered lengthwise | |
Lettuce leaves | 6 (For Serving) |
GETTING READY
1. Preheat the grill to about 350 F.
2. Score the fish 1 inch apart as seen in the video.
MAKING
3. For making fresh herb seasoning salt, clean and finely chop the herbs together. Add salt and lemon zest to it and mix it well.
4. Insert one lemon slice into the scored areas of the fillets, as seen in the video.
5. Drizzle olive oil over the salmon. Sprinkle some fresh herbs over the fish. Set it aside. Repeat the same with the eggplants.
6. Grease the grill evenly with oil. Place the eggplants and salmon over the grill as shown in the video.
7. Cook them covered. Turn the eggplants midway to get grill marks all over. Pull the eggplants when it is al dente, almost after 6 minutes.
8. Let the salmon cook a little further. Pull it out when done.
SERVING
9. Place the salmon on a bed of lettuce leaves. Serve it with grilled eggplants.
