Fillet of Salmon with Spinach and Pine Nut crust

Ingredients

Salmon fillet 10 Medium
Toasted pine nuts 250 Gram
Grated parmesan cheese 250 Gram
Olive oil 150 Milliliter
Baby spinach leaves 2 Bunch (200 gm) , divided
Flat leaf parsley 2 Tablespoon , chopped finely (handfull)
Basil leaves 2 Tablespoon (handfull)
Salt 1 Pinch

Directions

GETTING READY

1. Peheat the oven to required temperature.

2. In a blender blend the pine nuts, Parmesan, olive oil, handful of spinach leaves, parsley and basil till smooth.

MAKING

3. Spread the blended paste on top of the salmon fillets generously. Cook it in the preheated oven till done.

4. In a pan bring water to boil. Add the remaining spinach leaves and 1 pinch salt. Cook for 5 minutes or till wilted. Drain and set aside.

SERVING

5. In a serving plate, serve the salmon fillet with the wilted spinach and lemon wedges (if desired).
