Betty's Dill-Marinated Pan-Seared Salmon Fillets

In this video, Betty demonstrates how to make Dill-Marinated Pan-Seared Salmon Fillets. This recipe is for 6 salmon fillets that are chilled in an aromatic dill marinade and then pan-seared on top of the stove.

Ingredients

Salmon filets 6 , patted dry (about 2 ½ pounds total)
For marinade
Lemon zest 1 Tablespoon
Lemon juice 1/4 Cup (4 tbs)
Fresh dill 1/4 Cup (4 tbs) , finely chopped
Red onion 1/2 Cup (8 tbs) , chopped finely
Extra virgin olive oil 1/2 Cup (8 tbs)
Ground red cayenne pepper 1/4 Teaspoon
Ground sea salt 1 Teaspoon , freshly ground
Honey 1 Teaspoon (or brown sugar)
For garnish
Lemon slices 2 (as needed)
Lime slices 2 (as needed)

Directions

GETTING READY

1. In a measuring cup, mix together all the marinade ingredients-lemon zest, lemon juice, fresh dill, red onion, olive oil, cayenne pepper, sea salt, and honey.

2. In a 2-gallon Zip-lock bag, place the fresh salmon fillets and pour marinade on top. Tightly seal the bag, eliminating as much air as possible.

3. Place bag in a pan and refrigerate for 1-2 hours (no longer, as the marinade will break down the texture of the salmon).

MAKING

4. Place a large skillet on the stove and heat it over medium-high flame until it is very hot.

5. With tongs, place individual marinated salmon fillets into hot skillet. Cook in batches if needed.

6. Pour the marinade that has settled to the bottom of the Zip-Lock bag over the top of fish. Reduce the heat and cook for about 4 minutes per side or until the internal temperature of fish reaches 145 degree F.

7. When the fish is browned and flaky, immediately remove from heat and place on paper towel to soak up excess fat.

SERVING

8. Garnish with fresh dill, cilantro, lemon and lime slices and serve immediately with mango salsa.
