Roasted Capsicum and Alfa-Alfa Sprouts Salad with Peanut Dressing

Exotic! That's what this salad is. With a rare combination of roasted capsicum and alfa-alfa sprouts with an even more tasteful dressing based on peanuts with a dash of lemon, this salad is a good source of Omega-3 fatty acids, vitamin B1 and B3, which makes it a healthful choice despite being high in calories. Red capsicum 1 Medium
Green capsicum 1 Medium
Yellow capsicum 1 Medium
Alfalfa sprouts 2 Cup (32 tbs)
Oil 1/4 Teaspoon
Salt To Taste
For peanut dressing
Crushed roasted peanuts 1/2 Cup (8 tbs) (coarsely crushed)
Olive oil 1 1/2 Tablespoon
Lemon juice 2 Tablespoon
Dried mixed herbs 2 Teaspoon
Dried red chili flakes 1 Teaspoon



1. Pierce all the capsicum with a fork, brush them with oil and roast over an open flame until it turns black from all the sides.

2. Cool, wash it under cold water, remove and discard the burnt skin, stem and seeds. Cut the capsicums into cubes and set aside.

For Peanut Dressing:

3. In a bowl, combine roasted peanuts, olive oil, lemon juice, mixed herbs, chili flakes, and salt. Mix well.


4. In a large bowl, combine chopped capsicum, alfa alfa sprouts, salt, and prepared peanut dressing. Toss well.


5. Serve immediately.
