One of my favorite things that my mom would make when we were growing up was her spinach salad. Its insanely good. I added goat cheese and craisins to her original recipe to make it my own but you can play with the ingredients and leave things out if you want.
Spinach | 6 Cup (96 tbs) | |
Bacon slices | 6 , sliced, fried till very crispy | |
Hardboiled eggs | 3 , sliced | |
Sweet onion | 1/2 , thinly sliced | |
Craisins | 2 Tablespoon | |
Goat cheese | 1 Ounce (Optional) | |
For the dressing | ||
Bacon fat | 2 Tablespoon , warmed | |
Sugar | 1/4 Cup (4 tbs) | |
Red wine vinegar | 3 Tablespoon | |
Canola oil | 3 Tablespoon | |
Red pepper flake | 1/8 Teaspoon | |
Salt and pepper | To Taste |
MAKING
1. In a serving plate, place the spinach, followed by onion, bacon, hardboiled egg, craisins, and goat cheese. Set aside.
2. For the dressing – in a pan, heat the bacon fat and add in the sugar; stir until dissolved.
3. Pour in the red wine vinegar and stir, followed by the canola oil.
4. Turn off the stove and season the dressing with salt, pepper, and red pepper flakes.
5. Pour in the hot dressing over the salad just before serving and toss.
SERVING
6. Serve spinach salad with grilled chicken.
