Nutri Salad (Multivitamin Rich Recipe)

A medley of colourful veggies with a zesty apple-lemon juice-oregano dressing.

Ingredients

For dressing
Apples 1/2 Cup (8 tbs) , peeled, grated
Olive oil/Refined oil 1 Tablespoon
Powdered sugar 1 Tablespoon
Lemon juice 1 Tablespoon
Dried oregano 1/2 Teaspooon
Salt To Taste
Raisins 1 Tablespoon , finely chopped (Optional)
Other ingredients
Bell peppers 3/4 Cup (12 tbs) , thinly sliced
Cucumber 1/2 Cup (8 tbs) , thinly sliced
Carrot 1/2 Cup (8 tbs) , thinly sliced
Purple cabbage 1/2 Cup (8 tbs) , shredded
Tomato 1/2 Cup (8 tbs) , deseeded, finely chopped
Lettuce 1 Cup (16 tbs) , torn into pieces
Parsley 1 Tablespoon , finely chopped (Optional)

Directions

MAKING

1. In a small bowl, mix together olive oil, sugar, lemon juice, oregano, salt and raisins. Add apple and mix well.

2. In a mixing bowl, add bell pepper, cucumber, carrot, cabbage, tomato and the dressing, mix well. Add lettuce, toss to mix. Sprinkle with parsley.

SERVING

3. Serve with your choice of beverage.
