Festive Cranberry Pineapple Salad - Happy Thanksgiving

This is a great side dish for Thanksgiving or any Holiday meal! Happy Thanksgiving!!!


Roughly chopped walnuts/Roughly chopped pecans 1 Cup (16 tbs)
Fresh cranberries 12 Ounce
Sugar 2 Cup (32 tbs)
Can crushed pineapple 20 Ounce , lightly drained
Mini marshmallows 8 Ounce
Heavy whipping cream 2 Cup (32 tbs)
For garnish
Mini marshmallows 1/4 Cup (4 tbs)



1. In a food processor, mince the cranberries and place in a bowl.

2. Add in sugar, crushed pineapple and walnuts. Stir together well and cover with plastic wrap and refrigerate for at least one hour or overnight.

3. Remove from refrigerator and fold in mini marshmallows.

4. In a mixing bowl, pour in heavy whipping cream and whip until peaks form.

5. Slowly fold the whipped cream into the cranberry pineapple mixture.


6. Garnish the top with mini marshmallows.


It is easier if you freeze your cranberries before you mince them.
