In this video, Betty demonstrates how to make Sliced Tomatoes with Cucumber-Basil Dressing. This is a tasty way to use some of those fresh garden vegetables!
Cucumber | 1 Large , peeled, seeded, sliced thinly | |
Plain yogurt | 6 Ounce (3/4 cup) | |
Mayonnaise | 6 Ounce (3/4 cup) | |
Finely chopped onion | 1 Tablespoon | |
Finely chopped garlic | 1/2 Tablespoon | |
Fresh basil | 1/2 Cup (8 tbs) , chopped finely | |
Milk | 1/4 Cup (4 tbs) | |
Lemon juice | 1 Ounce | |
Sugar | 1/2 Tablespoon | |
Coarse sea salt | 1/4 Teaspoon | |
Black peppercorns | 1/4 Teaspoon , freshly ground | |
Tomatoes | 4 Medium , sliced to 1/4 inch thick slices. | |
For serving | ||
Basil sprig | 3 Medium |
MAKING
1. In a bowl add yogurt, mayonnaise, onion, garlic, basil, milk, sugar, sea salt, lemon juice and black pepper. Mix well till combined.
2. Add the cucumber slices and continue to mix till all the slices are well coated.
SERVING
3. In a serving platter, arrange the tomato slices. Spread the cucumber dressing over them generously and serve fresh garnished with basil sprig or refrigerate till used.
TIPS
This dressing will keep in the refrigerator for 2 days.
To make this vegetarian use the eggless mayonnaise.
