Caesar Salad

Once you find a great Caesar dressing, like in this recipe, making a great Caesar salad is no problem. Here, the crunch of the romaine is highlighted by the crispy homemade croutons and creamy dressing.

Ingredients

Romaine lettuce 1 , washed and dried
Croutons 2 Cup (32 tbs) (Buttery Homemade Croutons)
For dressing
Mayonnaise 1 Cup (16 tbs) (good quality)
Fresh lemon juice 2 Tablespoon
Dijon mustard 1 Teaspoon
Anchovy paste 1 Teaspoon
Garlic clove 1 , mince
Parmesan cheese 1 Cup (16 tbs) , shredded
Black pepper 1 Teaspoon

Directions

MAKING

For Caesar Dressing:

1. In food processor, add mayonnaise, lemon juice, Dijon, anchovy paste, garlic, Parmesan, and black pepper. Pulse until a smooth, well-blended sauce is formed.

For Salad:

2. With the romaine leaves, you can tear them into bite-sized pieces, chop them up, or leave them whole, depending on your preference.

3. Toss the romaine in the dressing or drizzle some over a plate of lettuce.

4. Top with Buttery Homemade Croutons.
