A delightful summer salad of watermelon and feta cheese.
Arugula leaves | 4 Cup (64 tbs) | |
Seedless watermelon | 2 Cup (32 tbs) , cubed | |
Red onion | 1/4 Medium , thinly sliced | |
Fresh basil | 2 Tablespoon , chop | |
Crumbled feta cheese | 1/4 Cup (4 tbs) | |
For the dressing | ||
Balsamic vinegar | 1/3 Cup (5.33 tbs) | |
Extra virgin olive oil | 1/3 Cup (5.33 tbs) | |
Salt and pepper | To Taste |
MAKING
1. In a salad bowl combine arugula, watermelon, onions, fresh basil and crumbled feta cheese.
2. In a bowl combine balsamic vinegar, salt and pepper and extra virgin olive oil, stir until well combined.
3. Pour the dressing on top of the salad and give it a good toss.
SERVING
4. Serve as an appetizer or along side of your meal.
