Betty's Pineapple Cloud Tropical Fruit Salad

In this video, Betty demonstrates how to make her lovely and elegant Pineapple Cloud Tropical Fruit Salad recipe. It is great for dinner parties, and can serve as a salad or as a dessert!

Ingredients

Canned pineapple chunks 20 Ounce , drained (juice saved)
Drained mandarin oranges 11 Ounce
Drained maraschino cherries 10 Ounce
Whipping cream 1/2 Pint
Miniature marshmallow 1 1/2 Cup (24 tbs)
For pudding
Sugar 1/2 Cup (8 tbs)
Flour 2 Tablespoon
Pineapple juice 3/4 Cup (12 tbs) (from the saved drained pineapple)
Eggs 2 , well beaten

Directions

GETTING READY

1. In a medium sized bowl, add pineapple chunks, drained mandarin oranges, and drained maraschino cherries. Cover the bowl with plastic wrap and refrigerate.

MAKING

For Pudding:

2. In a saucepan, add sugar, flour, mix and then pour pineapple juice. Stir until all flour lumps are dissolved.

3. Add eggs, mix thoroughly and place the pan over medium heat. Stir constantly and bring to a boil. Turn the heat to low and cook for about 3-4 minutes or until nice and smooth, stirring constantly. Remove from heat and let it sit for a few minutes to cool. Cover with foil, and refrigerate for about 5 hours.

For Salad:

4. About 1 hour before you assemble your salad, place whipping cream in the freezer, along with a large mixing bowl and beater.

5. When very cold, and the whipping cream is beginning to get ice crystals on the edges, place the whipping cream in the cold mixing bowl and beat with the cold beater until the cream holds its shape.

6. Fold the whipped cream into the pudding mixture.

7. Drain any extra juice from the fruit bowl and add miniature marshmallow. Mix to combine.

FINALIZING

8. Now, gently combine the pineapple/whipped cream mixture with the fruit and marshmallow mixture. Mix gently and thoroughly. Cover with plastic wrap and chill until ready to serve.

SERVING

9. Serve chilled and enjoy!
