With the cherry season in full swing, it is safe to say that cherries are the official fruit of 4th of July. They are such a versatile fruit, equally fabulous in both sweet and savory dishes, and exceptional in crisp summer salads. Fresh stemilt cherries | 1/4 Cup (4 tbs) | |
Walnuts | 1/2 Cup (8 tbs) | |
Granny smith apple | 1/2 | |
Red wine vinegar | 1 Tablespoon | |
Honey | 1 Teaspoon | |
Olive oil | 3 Tablespoon | |
Salt and pepper | To Taste | |
Lemon jucie | 1 Teaspoon |
GETTING READY:
1. Pit your sweet cherries and prepare your fennel and apples by coring the center and thinly slicing them.
MAKING:
2. Add them to a large mixing bowl filled with fresh spring greens and walnuts while you prepare the dressing.
3. In a small mixing bowl, add the vinegar, honey, olive oil, salt, pepper, and lemon juice and whisk until fully blended – for an optional extra cherry accent, chop up a few cherries and add that to the dressing and give it another whisk before pouring it on to your salad mixture.
SERVING:
Toss and then serve immediately.
