Sunset Garden Medley Tomato Salad

I learned to make this summer salad on one of our many trips to Italy, the farmhouse that became our second home was never short of fresh inspiration, and on a hot summer day, this salad refreshes and satisfies with very little effort.
Sunset Produce has a contagious passion for flavor that shines in their unique Campari tomato that offers this salad an exquisite flavor blend and takes me right back to those Italian holidays.


For the vinaigrette
Red wine vinegar 1/2 Cup (8 tbs)
Lemon 1/2 , juiced
Honey 2 Tablespoon
Salt 2 Tablespoon
Crushed pepper 1 Pinch
Olive oil 1 Cup (16 tbs)
For the salad
Tomatoes 12 , roughly chopped
Rocket leaves 2 Cup (32 tbs)
Mozzarella cheese 1/2 Cup (8 tbs) , thinly sliced



1. Blend the ingredients for the vinaigrette and allow them to sit while you prep the tomatoes.

2. Slice the tomatoes in uneven chunks and then place in a colander.

3. Sprinkle coarse salt over the top, stir and then allow them to rest atop a large mixing bowl for 10 minutes to draw out the juices of the tomatoes.

4. Arrange on a platter, spooning the juices over the top and then drizzling the vinaigrette across the top before serving on a bed of rocket leaf.


5. Serve right away.
