Grilled Pineapple and Chicken Salad

Chicken salads can get a little bland in flavor and color. Try this new twist that is full of fresh vegetables, the sweet taste of grilled pineapple and the light flavor of Greek Yogurt.


Boneless skinless chicken breast 3 Cup (48 tbs) , cooked, chopped (grilled or poached (rotisserie chicken ))
Celery sticks 2 , chopped
Carrots 2 , peeled and chopped
Red pepper 1/2 , seeded and chopped
Red onion 1/4 Small , chopped
Pineapple 1/4 , cored, grilled and chopped
Cashews 1/4 Cup (4 tbs) , toasted
Greek yogurt 1 Cup (16 tbs)
Extra virgin olive oil 2 Tablespoon
Salt and pepper To Taste
Fresh parsley 1 Tablespoon (for garnish)



1. In a large mixing bowl combine chicken, celery, carrot, red pepper, onion, grilled pineapple pieces, and cashew.

2. Add yogurt, olive oil, salt, and pepper. Gently toss to combine.


3. Garnish with parsley and serve on a bed of lettuce or serve as a lettuce wrap and enjoy.
