Fresh Mozzarella And Grape Salad

Chef Henry Piotrowski, Jr. of The Restaurant School at Walnut Hill College makes fresh mozzarella cheese and flavors it with fruit.


For the fresh mozzarella with grapes:
Water 1 1/4 Gallon
Kosher salt 4 Ounce (Boiled in salt water)
Mozzarella balls 2 Pound
Grapes 1 Cup (16 tbs)
For the poppy seed dressing :
Canola oil 2 Cup (32 tbs)
Salt 1/4 Teaspoon
Sugar 1/2 Cup (8 tbs)
White vinegar 1 Cup (16 tbs)
Poppy seeds 1/4 Cup (4 tbs)
Dry mustard 1/4 Teaspoon
Grenadine syrup 2 Tablespoon



The Fresh Mozzarella With Grapes:

1)In a large sauce pan or vessel heat the water along with salt.

2)Place the diced curd into the hot water and lightly submerge into the water and fold gently until the curd comes together.

3)Remove the soft smooth cheese and place into another bowl. At this pint you need to work quickly as the cheese is workable only when it is warm.

4)Place the hot cheese on a tray lined with cling wrap and foil. Spread the grapes onto the cheese and wrap it. Fold and make a clean seal with the foil shaping it in the form of a tube and set in ice cold water to chill.

The Poppy Seed Dressing:

5)In a medium saucepan on high heat add the canola oil and let it heat.

6)To the saucepan now bring together sugar and let it melt and add the grenadine and let it completely melt, Add the poppy seeds next.


7)Remove the foil and the cling wrap from the cheese which has been left to chill and slice it on the bias.

8)Place these slices on a platter and serve with the poppy seed dressing drizzled on top.


This recipe is very versatile as the grapes can be substituted with other fruits of your choice and the salt water can be substituted with Tomato juice or apple juice.
