The cool and refreshing taste of cucumbers, mild onions and a light yogurt sauce makes this salad not only delicious but also a show stopper.
Cucumber | 1 , sliced into ribbons | |
Red onion | 1/4 , thinly sliced | |
Plain greek yogurt | 1/3 Cup (5.33 tbs) | |
Juice of lemon | 1 | |
Garlic clove | 1 , pasted/grated | |
Cumin | 1/2 Teaspoon | |
Dill | 1 Tablespoon , chopped | |
Parsley | 1 Tablespoon , chopped | |
Salt and pepper | To Taste |
GETTING READY
1. Slice cucumbers the long way by using a peeler. (Only slice down to where the seeds start then flip over and do the other side.)
MAKING
2. In a large mixing bowl, combine yogurt, lemon juice, garlic paste, cumin, dill and parsley. Stir to combine.
3. Add the cucumbers and sliced red onions to the yogurt mixture and gently toss together.
4. Taste to season with salt and pepper.
SERVING
5. Serve immediately and enjoy!
