There are lots of really great things about this salad. I could go on and on and on and on and But, Ill just mention a few goodies: pistachios (lean protein, vitamin A, folic acid), apples (vitamin A), oranges (vitamin C, folic acid, calcium), and greens (vitamin A, calcium, potassium).

Navel oranges | 4 Large (peeled and chopped) | |
Apple | 1 (chopped and tossed with orange juice to prevent browning) | |
Feta cheese | 1/4 Cup (4 tbs) (crumbled) | |
Pistachios | 1/4 Cup (4 tbs) (chopped) | |
Beet chips | ||
Beets | 4 Small (peeled and thinly sliced) | |
Olive oil | 1 Teaspoon | |
Pepper | 1 Pinch | |
Salt | 1 Pinch | |
Homemade buttermilk dressing | ||
Lemon juice | 2 Tablespoon | |
Olive oil | 2 Tablespoon | |
Dijon mustard | 1 Teaspoon | |
White vinegar | 1 Tablespoon | |
Milk | 1/2 Cup (8 tbs) (or 1/2 C Buttermilk and omit vinegar) | |
Honey | 1/2 Tablespoon |
Getting Ready:
To Make Beet Chips:
1. Pre-heat oven to 375F. Toss beets with olive oil, salt, and pepper.
2. Lay on a baking sheet and bake for 10-13 minutes, or until beets are slightly crispy and tender.
3. Remove from oven and cool.
To Make Buttermilk Dressing:
1. Pour vinegar into a measuring cup. Add milk and fill to 1/2 C line. Stir and let sit for 5 minutes.
2. Whisk in lemon juice, salt, pepper, dijon, and honey. Stream in olive oil, whisking as you do.
Making:
1. Cook bacon.
2. Remove from pan and drain on a paper towel.
3. Cool, then crumble.
Serving:
1. Top greens with oranges, apples, feta, bacon, pistachios, and beet chips.
2. Toss with dressing.
3. Enjoy!
