Subway's Orchard Chicken Salad

The Subway Orchard Chicken Salad is a seasonal sub served, but you can make this chicken salad at home anytime. This salad features apples, cherry infused craisins, celery, and more.


Chicken breast 3 Cup (48 tbs) , cooked
Red apple 1 (Honeycrisp)
Green apple 1 (Granny Smith)
Celery 1/2 Cup (8 tbs) , chopped
Cherry juice infused craisins 1/2 Cup (8 tbs)
Light mayonnaise 1 Cup (16 tbs)
Salt To Taste
Pepper To Taste



1. Chop both apples into small cubes.

2. In a bowl, place the chopped apple cubes.

3. Sprinkle over 1 tablespoon of lemon juice over apples, this will help them from turning brown.

4. Add chopped chicken, chopped celery, and Craisins. Mix well.

5. Add 1 cup of light mayonnaise and stir well. Depending on how the salad is coated, you may want to add an additional 1/2 cup of light mayonnaise.

6. Season with salt and pepper. Allow flavors to marry in the refrigerator in a covered container for about an hour before serving.


7. Serve right away.


Adding almond slivers adds a nice touch too.
