Ingredients

Carrot 1 Cup (16 tbs) , julienned
Cabbage 1 Cup (16 tbs) , shredded
Red potatoes 5 , cubed
Dark raisins 1/2 Cup (8 tbs)
Walnuts 1/2 Cup (8 tbs)
Oil spray 2 Dash
Salt To Taste
Pepper To Taste
For sauce
Low fat cream cheese 4 Ounce
Low fat mayonnaise 1/2 Cup (8 tbs)
Curry sauce 1 Cup (16 tbs)

Directions

GETTING READY

1. For Dressing Sauce – mix all the ingredients together and set aside.

MAKING

2. Heat a pan and spray oil spray, add in the potatoes and season with salt and pepper. Cook for 10 minutes.

3. In a large bowl take carrots and cabbage. Add in the dressing sauce and mix well.

4. Stir in the sautéed potatoes and mix well.

5. Mix raisins and walnuts to the salad.

SERVING

6. Serve 18 Carrot Gold Salad with grilled chicken and enjoy!
