Onion | 1 Medium , finely chopped | |

Tomatoes | 2 Medium , finely chopped | |
Carrot | 1 Medium , shredded | |
Beet root | 1 Small , shredded | |
Cumin powder | 1 Teaspoon , roasted | |
Lemon | 1/2 Medium , juiced | |
Salt | 1 Pinch (to taste) | |
Cilantro leaves | 3 Tablespoon , finely chopped | |
Red chili powder | 1 Pinch (to taste) | |
Lemon zest | 1 Tablespoon |
MAKING
1. In a small bowl, add in all the finely chopped and shredded vegetables.
2. Add in the finely chopped cilantro and season it with roasted cumin powder, salt, lemon juice and red chili powder. Toss well.
SERVING
3. Serve the bowl of kachumber with 2 slices of toasted garlic bread or a bowl of rice.
