Curried Chicken Salad

A super delicious different kind of chicken salad. Great for sandwiches or to serve on lettuce.


Chicken breasts 1 Pound
Curry powder 1 Tablespoon
Apricot preserves 1/4 Cup (4 tbs)
Sour cream 1/4 Cup (4 tbs)
Mayonnaise 1/4 Cup (4 tbs)
Celery 1/4 Cup (4 tbs) , chopped
Red onion 1/4 Cup (4 tbs) , chopped
Salt 1/2 Teaspoon
Pepper 1/4 Teaspoon



1. Boil chicken breast until done.

2. Cool and cut into cubes.


3. Put chicken in a bowl.

4. Add in curry powder, apricot preserve, sour cream, mayonnaise, celery, onion, salt and pepper.

5. Toss well until all blended together.


6. Spread salad on bread and serve as sandwich or just serve it as it is on fresh lettuce.


Can be kept in the refrigerator, covered, for up to 5 days.
