Cooked chicken breast | 2 Cup (32 tbs) , diced | |
Mango and curry sauce | 3 Tablespoon | |
Green onions | 4 Medium , sliced | |
Apples | 2 Cup (32 tbs) , chopped | |
Celery | 1 Cup (16 tbs) , chopped | |
Mayonnaise | 1 Cup (16 tbs) | |
Curry powder | 1 Teaspoon (or to taste) | |
Salt | 1 Teaspoon (or to taste) | |
Pepper | 1 Teaspoon , freshly ground (or to taste) | |
Cashews | 1 Cup (16 tbs) |
MAKING
1.In a large mixing bowl combine chicken, green onions, apples and celery.
2.In a separate bowl, combine mayonnaise, mango & curry Sauce, curry, salt and pepper, mix well.
3.Combine mayonnaise dressing with chicken mixture thoroughly and chill.
4.Adjust the seasoning if required.
SERVING
5.Serve in a bed of lettuce sprinkled with some nuts on top.
