Tomato and Cucumber Salad

Tomatoes 4 Medium
Salad oil 1/4 Cup (4 tbs)
Cider/Red wine vinegar 1/4 Cup (4 tbs)
Chopped parsley 1 Tablespoon
Minced fresh dill/Dried dill 1 Tablespoon
Green onions 3 , finely chopped
Lettuce head 1 Small
Cucumbers 2 , peeled
Salt To Taste
Pepper To Taste



1) In a medium mixing bowl, add in the tomatoes, salad oil, cider or red wine vinegar, parsley, dill and chopped green onions.

2) Cover the bowl and let chill in the refrigerator for a couple of hours.

3) Just before serving, shred the lettuce leaves like cabbage.

4) Add in the shredded lettuce and sliced cucumbers into the salad bowl.

5) Sprinkle salt and pepper. Toss the salad lightly.


6) Serve the Tomato and Cucumber Salad chilled. If desired, sprinkle it with crumbled cheddar cheese.
