Potato Salad with Olive Oil and Oregano

Ingredients

White potatoes/10 cups little red potatoes, steamed in their jackets 6 Large , quartered and steamed in their jackets
Sweet onion 1 Large , minced (white or red)
Celery stalks 4 , sliced
Hard boiled eggs 4 , peeled and sliced
Peas 1 Cup (16 tbs) (fresh or frozen)
Dried oregano 1 Tablespoon
Salt 1 Teaspoon
Black pepper 1 Teaspoon
Olive oil 1/2 Cup (8 tbs)

Directions

GETTING READY

1. Boil potatoes and cut them into bite size pieces.

2. In a salad bowl mix onions, oregano, pepper, olive oil, eggs, celery and peas.

3. Toss well.

SERVING

4. Serve delicious Potato Salad With Olive Oil And Oregano warm.
