Salad with Watercress, Radicchio and Pine Nuts's picture

Green beans 1 Cup (16 tbs) (2 inch pieces)
Red onion 1 Small , halved and cut into thin rings
Watercress 1 Bunch (100 gm) , stemmed
For dressing
Cider/Wine vinegar 3 Tablespoon
Olive oil 1/4 Cup (4 tbs)
Salt 1 Teaspoon
Mustard powder 1/2 Teaspoon
Black pepper 1/2 Teaspoon
Radicchio head 1 , washed, dried, torn into bite size pieces
Romaine head 1 , washed, dried, torn into bite size pieces
Pine nuts 1/2 Cup (8 tbs)
Garlic 4 Clove (20 gm) , mashed
Oregano 1 Teaspoon
Thyme 1/2 Teaspoon
Basil 1/2 Teaspoon



1. In a bowl steam the string beans till they are crispy and tender. Steam for 3 minutes.

2. Place the steamed beans in a colander. Rinse them well in cold water.

3. Drain the excess water and place it in a salad bowl.

5. In the bowl add the rest of the vegetables and pine nuts.

6. Whisk the dressing and pour it on the salad. Toss well to coat radicchio and romaine well.


7. Taste to check. Add seasoning if needed.


8. Serve Salad With Watercress, Radicchio And Pine Nuts immediately.
