Turkey Celery Grape and Nut Salad

Turkey pieces 10 , chopped
Grapes 3 Ounce
Celery stalks 4
Almonds 2 Ounce
Lemon 1/2 , juiced
Orange 1/2 , rind grated
Lettuce leaves/Endive leaves 4
Paprika 1/4 Teaspoon
For mayonnaise
Salt 1/2 Teaspoon
Pepper 1/4 Teaspoon
Dried mustard 1/2 Teaspoon (Leveled)
Sugar 3/4 Teaspoon
Egg/2 egg yolks 1
Salad oil 1/2 Pint
Lemon juice 1 Tablespoon
Wine vinegar 2 Tablespoon



1) Make mayonnaise: In a liquidizer, put pepper, mustard and sugar. Add egg. Mix thoroughly at low speed. Add a few drops of oil. Mix well. Then add remaining oil in steady stream until it has been absorbed and mayonnaise is very thick. Add lemon juice, vinegar, salt and 1 - 2 tablespoons boiling water, which thins it and helps to make it keep.

2) Chop turkey into medium size pieces.

3) Dip the grapes in boiling water and then in cold water. Peel them.

4) Slice celery.

5) Dip almonds in boiling water, remove skins. halve them.


6) In moderate oven, brown the nut halves for 2 minutes.

7) Add extra lemon juice and grated orange rind to mayonnaise, to flavour.

8) Mix turkey and other ingredients into mayonnaise.


9) On a serving dish, place lettuce or endive leaves.

10) Arrange the salad over leaves and sprinkle with a little paprika.
