Chilled Creamy Cauliflower Salad

Ingredients

Cauliflower 1 Medium , broken into flowerets
Tomato 1 Medium , coarsely chopped
Cucumber 1 Medium , peeled and coarsely chopped
Green onions with tops 3
Celery stalk 1 , finely chopped
Chopped green pepper 1/2 Cup (8 tbs)
Hard cooked eggs
Sweet pickle relish 2 Tablespoon , drained
Mayonnaise 1/2 Cup (8 tbs)
Salt 1/2 Teaspoon
Pepper 1/4 Teaspoon
Lemon juice 1 Tablespoon
Bacon slices 4 , cooked and crumbled

Directions

MAKING

1. In a saucepan cook cauliflower in a small amount of boiling water, covered for 10 minutes and drain well.

2. Toss gently adding the next 11 ingredients.

3. Cover and refrigerate several hours.

SERVING

4. Spoon salad into serving container, sprinkle with bacon and serve.
