Marinated Chayote Salad

Ingredients

Chayotes 3 , sliced or diced
Fresh green beans 1/2 Pound
Boiling salted water 2 Cup (32 tbs)
Salad oil 1/2 Cup (8 tbs)
Vinegar 1/4 Cup (4 tbs)
Lime juice 1 Teaspoon
Salt 1/2 Teaspoon
Sugar 1/4 Teaspoon
Crumbled tarragon 1/4 Teaspoon
Pepper 1 Dash
Tomatoes/Cherry tomatoes 2 Medium , cut into wedges
Lettuce leaves 4 , crisp

Directions

GETTING READY

1. Drain the diced or sliced chayotes and let them cool.

MAKING

2. In boiling water add salt and cook the beans, till they turn tender.

3. Drain and cool when well cooked.

4. Add vinegar, lime juice, tarragon, pepper, sugar, salt and salad oil.

4. Mix beans and chayote. Refrigerate.

SERVING

5. Serve marinated chayote salad with tomatoes and beans on crispy lettuce leaves.
