Red Potato Salad

Ingredients

Red potatoes 3 Pound (Approximately 10)
Olive oil flavored cooking spray 1
Green onions 1 Cup (16 tbs) , chopped
Fresh parsley 1/2 Cup (8 tbs)
Canned pimientos 1/4 Cup (4 tbs) , chopped
Fat free yogurt 1/2 Cup (8 tbs)
White wine vinegar 3 Tablespoon
Dijon mustard 1 Tablespoon (Grey Poupon)
Black pepper 1/4 Teaspoon
Red cayenne pepper 1/4 Teaspoon
Ground tarragon 1/4 Teaspoon

Directions

MAKING

1) In a Dutch oven, add potatoes and cover with water.

2) Heat till boiling.

3) Partially cover and allow to simmer for 25 minutes till tender.

4) Drain and cool.

5) In a pan, saute onions till light browned.

6) Without paring the potatoes, cut into 1/4" slices.

7) In a bowl, add yogurt and remaining ingredients and mix well.

SERVING

8) When ready to serve, add the curd dressing to the potatoes and gently toss.
