Under 30 minutes Hot Potato Salad

Red small potatoes 12 Ounce (8 pieces)
Olive oil 6 Tablespoon
White vinegar 2 Tablespoon
Parsley 2 Tablespoon , chopped



1) Using a scrubber, scrub the potatoes clean

2) Into a pot of boiling salted water, place the potatoes and cover with a lid to cook for 20 minutes

3) Without peeling, cut the potatoes into quarters

4) Using a whisk blend together the oil, vinegar, salt and the pepper

5) Add the chopped parsley to the dressing


6) Onto a serving platter, place the potatoes and then drizzle over the lemon and oil dressing
